Interview with Mr E Bunny

Bringer of sweet treats, hider of chocolate eggs and joyful mascot of spring; Mr. Bunny knows everything there is to know about Easter. We got to spend some time with the rabbit and the legend, to find out his thoughts on Sponge cakes for all your Easter gift-giving and self-indulging this year.

Dressed in a smart blue coat with a cheerful disposition and a sneaky twinkle, it is clear why this bunny has become such an icon for this time of year. We know it must be hard for them to find the time at this time of year but we invited the Easter Bunny to our head office to sample some of our favourite spring cakes to see if we could get the paw of approval.

We first shared our current favourite, the Triple Chocolate Mini Egg Cake. With four layers of light chocolate sponge sandwiched with milk and white chocolate buttercream and finished with a decadent decoration of chocolate and mini eggs; this is a showstopper for lovers of all things delicious and chocolate.

So, Mr Bunny, now that you've tried a bite of the cake, what do you think?

Easter Bunny: Mmm... [takes another nibble] Oh my whiskers! That’s delicious! The sponge is light and practically melts in my mouth, and the buttercream? It’s smooth with a good balance of milk and white chocolate, not too sweet or too rich. And those mini eggs on top? One of my personal favourites - they are like little bursts of joy with every bite! This cake has everything I love about Easter: the chocolate, the fun, and the pure indulgence. If I could, I’d hop back for a second slice...

Clearly chocolate is a favourite but what about another staple of a bunny’s diet, carrots? Packed with cinnamon, walnuts, nutmeg and sultanas, the Sponge Carrot Cake is finished with a vanilla buttercream and a sprinkling of walnuts. A firm favourite for many but how does a chocoholic feel about this moist and delicious cake.

Easter Bunny: Oh, now you're really talking! Carrot cake is such a fantastic alternative to all the chocolate at Easter and always a winner with rabbits am I right? Don’t get me wrong, I love a good chocolate egg, but this cake is like a breath of fresh spring air. It’s refreshing, with the freshly grated carrots bringing that natural sweetness, while the cinnamon and nutmeg give it a comforting warmth—perfect for the season. The walnuts add a nice crunch, and those plump sultanas are a sweet surprise. And don’t even get me started on the vanilla buttercream—it’s the perfect finishing touch, light and creamy, without overpowering all those lovely flavours. This cake feels just right for Easter—something different, but still as indulgent and delicious as a chocolate treat.

The third cake is a bit of a wild card for the Easter Bunny - we chose our Lemon Drizzle Cake as it can be a refreshing alternative with a zingy flavour while being the favourite of many friends and family. The soft lemon-flavoured sponge is filled with delightfully tangy lemon buttercream and is the perfect zingy finish to your Easter roast.
