Celebrating Sponge on Norfolk Day

As it’s Norfolk Day, we’re taking a trip down memory lane, celebrating our amazing fun team, and raising a toast to being a slice of Norfolk’s finest!

From a small Norfolk town to Nationwide!

Since opening in 2000, the higgledy-piggledy café of Byfords in Holt has been dishing out scrumptious cake slices. With old-school standards and proper ingredients, these cakes quickly developed a massive following, and demand just kept skyrocketing. It was here that the vision of Sponge was born: to share these slices of joy not just with the lovely folks of Holt but with cake lovers all over the country.

During the summer of 2009, our cakes were whisked away from their cozy Byfords home and showcased at Norfolk shows and events under the name Sponge. The feedback was so amazing that we decided to set up a dedicated bakery and start selling directly to our wonderful customers online.

In 2020, after more than a decade of shipping our cakes nationwide and delighting thousands of happy customers, we took the next big leap by moving to a large, modern, high-tech bakery. This epic upgrade not only let us bake even more cakes but also helped us create two separate bakeries: one for our gluten-free goodies and another for everything else. Now, we're thriving in our fancy new bakery, offering next-day delivery, and rocking it with a fantastic team.

Sponge Moments

We created Sponge to sprinkle as many happy moments as possible into our customers' lives, whether you're celebrating a special occasion or just savouring a cup of tea with a slice of cake. That’s why it’s essential to our ethos to include everyone—whether you’re vegan, gluten-free or dairy-free, you deserve to enjoy a Sponge moment just like everyone else.

The Gluten-Free Journey

Striving for inclusivity from the get-go, we created a gluten-free range over a decade ago and have been on a mission to perfect it ever since. Our new bakery revolutionised the way we create gluten-free Sponges, but we didn’t stop at cake. Launching our gluten-free brownies was another key milestone and an absolute hit with our customers. The positive feedback fuelled our big dreams. So, after a rigorous process that included staff training, supply chain control, testing, and even developing custom ingredient tracking software, we’ve earned Coeliac UK certification—a stellar achievement for the whole team.
