During the 19th and early 20th centuries, it was common for students in rural areas to bring food to their one-room schoolhouses to pay for their education. Apples were plentiful and easy to transport, as well as being able to be preserved for longer periods.
The third reason could be cultural references, inn some cultures the apple has specific connotations related to teaching. One example is from Denmark, it was customary for students to give their teachers apples or flowers on the first day of school as a sign of respect and gratitude.
