Sticky Toffee pudding is a UK favourite dessert, often served with scrumptious custard, but can also be served with cream or ice cream. It’s a dessert which consists of a moist sponge cake made with finely chopped dates, covered in a toffee sauce and it is considered a British classic.
Where it originated is a bit of mystery and it’s often disputed within the culinary industry. Francis Coulson and Robert Lee developed and served sticky toffee pudding at their hotel in the Lake District, in the 1970s. And a food critic (Simon Hopkinson) claimed that Coulson told him he got the recipe from someone called Patricia Martin from Lancashire. There was a difference between the two recipes, but only in the toffee sauce. Martin’s son later told Simon Hopkinson that his mother originally sourced the recipe from two Canadian air force officers who stayed at her hotel in the second world war.
Although there appears to be a lot of mystery surrounding this British dessert (which might not be British at all), we can mostly agree that it is delicious. Even places colonised by the British, such as Australia and New Zealand enjoy this delightful pudding, although it is often called sticky date pudding down under. So, it makes sense that on the 23rd of January, it’s International Sticky Toffee Pudding Day – a day to celebrate this family favourite across the world.
