What can you say about a carrot? Quite often when we think of them, we associate them as being a rabbit’s favourite food. We were always told as children that eating the carrots on your plate would help you see in the dark. By all means carrots do provide you with Vitamin A which is used by your body to maintain normal eyesight, however, they don’t make your eyesight better than normal by eating lots of them like we were told.
We have to face it though; carrots are a go to vegetable for a lot of us. That is by no means a bad thing, and it’s understandable why we lean towards them more than green vegetables say, as they tend to be quite sweet. Due to their sweetness, they have been used for centuries in sweet desserts. It is thought that the modern carrot cake actually derived from the medieval carrot pudding, that was enjoyed across Europe, although the is some contention as to the actual origins of the humble carrot cake.
In the 20th century carrot cake was re-introduced as a “healthy alternative” to traditional desserts, this was due to the vegetable content in it. The first time this was out of necessity, and during World War II when rationing was a must, but vegetables were plentiful due to “Dig for Victory” when everyone was encouraged to grow their own, carrots were a great substitute for the lack of other items such as sugar. The second wave of reintroduction in the latter years of the 20th century, it was spurred by the popular (and often misguided) wave of health foods.
We do understand why the carrot cake is a favourite though, it’s the mixture of sweetness, the texture and the spices make it quite enjoyable to eat. On the 3rd of February 2022 it is Carrot Cake Day, so it’s a great opportunity to celebrate this wonderful cake.
